Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a muffin tin well.
  • In a large mixing bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
  • In another bowl, combine the sugar, egg, milk, and vanilla extract. Whisk until frothy.
  • Gradually pour the wet ingredients into the dry ingredients, mixing just until combined.
  • Add the cubed bread into the bowl and gently fold in until each piece is coated.
  • Spoon the mixture into the greased muffin tin to fill each cup about 3/4 full.

Topping and Baking

  • Mix the sugar and cinnamon together in a small bowl. Sprinkle generously over each muffin.
  • Bake for 15-20 minutes, until golden brown and a toothpick comes out clean.

Notes
