Preparation

  • Preheat your oven to 350°F. Grease a 9x13 inch baking pan generously.
  • In a large bowl, cream the softened butter and sugar together until light and fluffy, about 2-3 minutes.
  • Add the eggs one at a time, mixing until glossy, then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  • Gently fold in the chopped cranberries, being careful not to squish them.
  • Spread the batter evenly into the greased baking pan.
  • Bake for 30-35 minutes, until a toothpick inserted comes out clean. Allow to cool completely in the pan before cutting into squares.

Notes

Store in an airtight container at room temperature for up to 3 days, or refrigerate for about a week. For longer storage, freeze for up to 3 months.
