Ingredients
  

For the Poppers

  • 1 pound Ground chicken Base of the recipe, high in protein.
  • 2 medium Zucchinis, shredded Adds moisture and nutrients; squeeze out excess water.
  • 1 large Egg Acts as a binding agent.
  • 1/2 cup Breadcrumbs For a golden-brown exterior, Italian-seasoned preferred.
  • 1 teaspoon Garlic powder Adds depth and flavor.
  • 1 teaspoon Onion powder Adds depth and flavor.
  • to taste Salt and pepper Season according to preference.
  • Oil for frying Use an oil with a high smoke point like canola or vegetable.

For the Creamy Cilantro Sauce

  • 1/2 cup Greek yogurt or sour cream Creates the creamy sauce; Greek yogurt adds protein.
  • 1 tablespoon Lime juice Adds brightness and balance to the dish.
  • 1 clove Garlic, minced Enhances the sauce flavor.
  • to taste Fresh cilantro Adds freshness to the sauce.

Instructions
 

Preparation

  • Shred zucchinis using a box grater or food processor and squeeze out excess moisture.
  • In a large bowl, combine ground chicken, shredded zucchini, egg, and breadcrumbs. Add garlic powder, onion powder, salt, and pepper. Mix well until uniformly combined.
  • Form the mixture into small patties, about the size of a golf ball.

Cooking

  • Heat oil in a skillet over medium heat. The oil is ready when a drop of water sizzles upon contact.
  • Fry the patties, about 4-5 minutes on each side until golden brown and cooked through.

Making the Sauce

  • In a blender, combine cilantro, Greek yogurt (or sour cream), lime juice, and minced garlic. Blend until smooth, adding salt to taste.

Serving

  • Serve poppers warm with creamy cilantro sauce on the side, garnished with extra cilantro if desired.

Notes

Can be made ahead and stored in the fridge or freezer for later. Ensure to squeeze out excess water from the zucchini to avoid soggy poppers.
