  • 2 pieces boneless skinless chicken breasts The star of the show. Tender and juicy.
  • 1 sheet puff pastry, thawed but cold Adds rich, buttery goodness.
  • 1 tablespoon olive oil For searing the chicken.
  • 1 tablespoon butter For sautéing the mushrooms.
  • 1 cup finely chopped mushrooms Provides earthy flavors.
  • 1 small shallot, finely chopped Adds aromatic touch.
  • 2 cloves garlic, minced Enhances flavor.
  • 4 slices prosciutto Adds a hint of sophistication.
  • 1 tablespoon Dijon mustard Rounds out the flavors.
  • 1 large egg yolk For a golden finish.
  • 1 teaspoon water For mixing with egg yolk.
  • to taste salt and black pepper Essential for seasoning.

Instructions
 

Preparation

  • Season chicken liberally with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear chicken for 4-5 minutes on each side until golden brown. Transfer to a plate to cool completely.
  • In the same pan, add butter and melt. Sauté chopped mushrooms, shallots, and garlic until moisture evaporates, roughly 8-10 minutes. Allow to cool.

Wrapping

  • Lay prosciutto on plastic wrap, spread cooled mushroom mixture on top, and place chicken in the center. Roll tightly and chill in the fridge for 15-20 minutes.
  • Roll out puff pastry on floured surface, place chicken in the center, wrap tightly, seal edges, and chill for another 10 minutes.

Baking

  • Preheat oven to 400°F (200°C). Whisk egg yolk with water and brush over pastry. Cut small slits for steam to escape.
  • Place Chicken Wellington on a lined baking sheet and bake for 25-30 minutes until golden brown. Let rest for 5 minutes before slicing.

Notes

Store leftovers in an airtight container in the fridge for 2-3 days. Reheat in the oven at 350°F for 10-15 minutes to keep pastry crispy.
