  • 1.5 cups long grain white rice This fluffy rice soaks up the flavors.
  • 2 cans cream of chicken or mushroom soup Both soups work; mushroom adds an earthy taste.
  • 1 cup water
  • 2 cups milk Use for a creamy texture.
  • 1 envelope onion soup mix Flavor booster, consider making your own.
  • 1.5 cups shredded cheddar cheese For melting and additional flavor.
  • 3 pieces boneless skinless chicken breasts or thighs High protein and remains juicy.
  • to taste salt and pepper Essential for flavor enhancement.

Instructions
 

Preparation

  • Preheat the oven to 350°F.
  • Grease a 9x13 baking dish with oil or spray.
  • In a large bowl, combine the rice, both cans of soup, water, milk, and onion soup mix. Stir until mixed.

Baking

  • Pour the mixture into the greased baking dish and sprinkle half of the shredded cheddar cheese over the top.
  • Nestle the chicken breasts on top of the mixture and press down gently.
  • Cover the baking dish tightly with aluminum foil.
  • Bake in the preheated oven for 90 minutes.
  • Remove the foil and sprinkle the remaining cheese on top. Bake uncovered for an additional 10 minutes until cheese is melted.
  • Let the casserole rest for 15-20 minutes before serving.

Notes

For a crispy cheese layer, broil for a couple of minutes. You can use leftover chicken to reduce prep time and add vegetables like broccoli or peas for extra nutrition.
