Ingredients
  

For the Kofta

  • 1 lb lean ground chicken The star of the show!

  • 1 tsp smoked paprika Provides a touch of smokiness.
  • 2 tbsp olive oil for cooking Ensures a golden-browned finish.

For the Yogurt Sauce

  • 1 cup plain thick Greek yogurt The creamy magic.
  • 1 tbsp fresh lemon juice Cuts through the richness.
  • 1 tbsp olive oil Adds richness.
  • 1 tbsp fresh herbs (optional), finely chopped Add for extra flavor.

Instructions
 

Preparation

  • In a large mixing bowl, combine the ground chicken, chopped onion, and minced garlic until mixed evenly.
  • Add fresh parsley, cilantro, ground cumin, ground coriander, smoked paprika, and a pinch of salt and pepper, blending it until cohesive.
  • Form the mixture into small, elongated meatballs about 2 inches long.

Cooking

  • Heat 2 tablespoons of olive oil in a skillet over medium heat until shimmering.
  • Add kofta to the skillet, cooking for about 4-5 minutes on each side or until golden brown and cooked through.

Yogurt Sauce

  • In a bowl, whisk together Greek yogurt, lemon juice, olive oil, salt, and black pepper.

Serving

  • Arrange the koftas on a platter, drizzling with the yogurt sauce or serving it on the side.

Notes

For best results, avoid overmixing and allow the kofta to rest before cooking. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
