  • 8 ounces cream cheese, softened Provides the creamy goodness we all crave.
  • 1 cup shredded mozzarella cheese, divided Melts beautifully for a gooey topping.
  • ½ cup Parmesan cheese, optional For an extra layer of flavor.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Grease a 9×13 inch baking dish with butter or cooking spray.
  • Slice the chicken breasts in half horizontally to create four cutlets.
  • In a mixing bowl, whisk together 1 tablespoon of olive oil, minced garlic, Italian seasoning, salt, and pepper. Toss in the chicken cutlets to coat.
  • Cover the chicken and chill in the fridge for 15-30 minutes.

Cooking

  • Heat the remaining tablespoon of olive oil in a skillet over medium heat and sauté the spinach until wilted, about 2-3 minutes.
  • In a bowl, beat the softened cream cheese until smooth. Add the wilted spinach and half the mozzarella cheese. Mix until creamy.
  • Place the marinated chicken cutlets in a single layer in the prepared baking dish.
  • Spread the spinach and cream cheese mixture evenly over the chicken. Top with the remaining mozzarella cheese.
  • Bake for 20-30 minutes, until the chicken is cooked through and the cheese is melted and golden.
  • Let stand for 5 minutes before serving.

Notes

Make sure cream cheese is softened for easy mixing. For juicy chicken, avoid overcooking it! Feel free to add other veggies or a sprinkle of red pepper flakes for a kick.
