For the Potato Puffs

  • 2 cups mashed potatoes Freshly made or leftover
  • 1 cup shredded cheese (cheddar or mozzarella) Any cheese can work
  • 1/2 cup flour Helps bind the mixture
  • 2 whole eggs Can substitute with flax egg for vegan
  • 1/2 teaspoon garlic powder Adjust to taste
  • 1/2 teaspoon onion powder Adds flavor
  • to taste none salt and pepper Essential for seasoning
  • as needed none oil for frying Use a neutral oil like vegetable or canola

Instructions
 

Preparation

  • In a large bowl, combine mashed potatoes, shredded cheese, flour, eggs, garlic powder, onion powder, salt, and pepper. Mix until everything is well incorporated but not overly sticky.
  • Heat oil in a frying pan over medium heat, about 1 inch deep, until hot.
  • Scoop out the potato mixture with a tablespoon and roll it into balls.

Frying

  • Carefully place the potato balls into the hot oil without crowding the pan.
  • Fry until golden brown on all sides, approximately 3 to 5 minutes.
  • Remove puffs with a slotted spoon and drain on a paper towel-lined plate.

Serving

  • Serve hot and enjoy, optionally with dipping sauces like ranch or spicy aioli.

Notes

To ensure the best results, use cold mashed potatoes and don't rush the frying process to achieve the perfect crispy exterior.
