  • 2 cups mashed potatoes Use a rich, creamy recipe, possibly with garlic and butter.
  • 1 cup shredded cheese Cheddar is classic, but feel free to experiment with gouda, mozzarella, or pepper jack.
  • 1/2 cup breadcrumbs Panko gives extra crispiness.
  • 1/4 cup green onions, chopped Adds a fresh, zesty touch.
  • 1 large egg Serves as a binding agent.
  • to taste salt and pepper Essential for flavor.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) if baking, or fill a shallow pan with oil and heat on medium-high if frying.
  • In a mixing bowl, combine the mashed potatoes, shredded cheese, breadcrumbs, green onions, and egg. Season with salt and pepper.
  • Mix the ingredients until well combined, using your hands or a spatula.
  • Shape the mixture into small puffs, about the size of a tablespoon.

Cooking

  • If baking, place the puffs on a greased baking sheet lined with parchment paper and brush lightly with oil or melted butter. Bake for 20-25 minutes until golden brown.
  • If frying, carefully lower the puffs into hot oil and fry for 3-4 minutes until crispy and golden, turning occasionally.

  • Serve warm and enjoy the delightful contrast of crispy exterior and creamy filling.

Notes

These puffs can be frozen uncooked and cooked from frozen. Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in a toaster oven or air fryer for best results.
