Dough Ingredients

  • 1 cup all-purpose flour The backbone of our puffs. Don’t skimp on it!
  • 1/2 cup unsalted butter Adds richness and flavor. Don’t use margarine.
  • 1 cup whole milk For creamy texture, avoid skim milk.
  • 4 large eggs Helps the puffs rise. Use farm-fresh if possible.

Cheese Ingredients

  • 1 1/2 cups grated sharp cheddar cheese The star ingredient. Gruyère is a lovely alternative.
  • 1/2 teaspoon salt Essential for flavor.
  • 1/2 teaspoon garlic powder or paprika Optional for flavor enhancement.

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a medium saucepan, combine the milk, butter, and salt over medium heat until it simmers.
  • Remove from heat and stir in the flour vigorously until a ball forms.
  • Allow the dough to cool for about five minutes.
  • Crack in the eggs one at a time, mixing well after each addition until the dough is smooth.
  • Fold in the grated cheese and any optional spices until fully combined.
  • Using a tablespoon, drop portions of the dough onto the prepared baking sheet, spaced about 1.5 inches apart.
  • Bake for 20 to 25 minutes until golden brown and puffed up.
  • Let cool briefly before serving warm.

Notes

For best results, use room temperature eggs, avoid opening the oven too soon, and use freshly grated cheese.
