Main Ingredients

  • 18 TBSP Unsalted butter 1 cup plus 2 tbsp, to be browned for flavor
  • 2.67 cups All-purpose flour Sifted
  • 1 TBSP Cornstarch For texture
  • 1 tsp Baking soda
  • 1 tsp Salt Essential for enhancing flavors
  • 2 tsp Ground cinnamon For the dough
  • 1 tsp Ground ginger For the dough
  • 0.25 tsp Ground nutmeg For the dough
  • 0.5 tsp Cardamom For the dough
  • 0.25 tsp Ground cloves For the dough
  • 1.5 cups White granulated sugar For the dough
  • 2 Large Eggs Room temperature
  • 1 tsp Pure vanilla extract

Chai Sugar Coating

  • 0.5 cup White granulated sugar For rolling
  • 1 tsp Ground cinnamon For rolling
  • 0.5 tsp Ground ginger For rolling
  • 0.25 tsp Ground nutmeg For rolling
  • 0.25 tsp Cardamom For rolling
  • 0.25 tsp Ground cloves For rolling

Instructions
 

Preparation

  • Melt the butter in a large frying pan over medium heat until it turns a beautiful amber color.
  • Cool the butter for about 40 minutes or place in the fridge and stir every ten minutes until it thickens.
  • In a medium bowl, sift together the flour, cornstarch, baking soda, salt, and spices.
  • In a large mixing bowl, whisk the brown butter with 1 ½ cups of white granulated sugar, eggs, and vanilla extract until combined.
  • Fold the dry ingredients into the wet mixture gently until combined.
  • Let the dough rest for around 10 minutes while preheating your oven to 350°F and lining cookie sheets with parchment paper.
  • Prepare the chai sugar coating by mixing the leftover sugar with the spices in a bowl.
  • Scoop out the dough and roll each ball in the chai sugar mix.

Baking

  • Place six dough balls on each lined cookie sheet, allowing room to spread.
  • Bake for about 13–15 minutes, or until edges are lightly golden.
  • Let the cookies sit on the hot pan for around six minutes before rolling the top back in chai sugar and transferring to a wire rack to cool.

Notes

For best results, ensure butter is perfectly browned, flour is spooned, and eggs are at room temperature. You can add nuts or chocolate chips for variations.
