Ingredients
  

  • 4 cups shredded carrots
  • ½ cup raisins
  • ¼ cup mayonnaise
  • 1-2 tbsp honey or maple syrup
  • 1 tbsp lemon juice
  • 1 pinch salt
  • Optional ¼ cup chopped walnuts or pecans
  • Optional ¼ cup dried cranberries

Instructions
 

  • Grate the carrots using a box grater or food processor.
  • In a large mixing bowl, combine the shredded carrots and raisins.
  • In a separate bowl, whisk together the mayonnaise, honey or maple syrup, lemon juice, and salt until smooth.
  • Pour the dressing over the carrots and raisins, and toss until well coated.
  • If using, add the walnuts, pecans, or cranberries and mix again.
  • Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  • Serve chilled and enjoy as a refreshing side dish!
