Cook chopped bacon in a large pot over medium heat until crispy. Remove bacon and leave fat in pot.
Add ground beef, pork, and diced stew meat to the pot. Brown thoroughly, breaking up ground meat as it cooks.
Add onion and garlic if using; sauté until softened, about 3-4 minutes.
Stir in chili powder, smoked paprika, cumin, cayenne, salt, and pepper. Cook until fragrant, about 1-2 minutes.
Add beef broth, tomato paste (if using), and apple cider vinegar. Stir to combine.
Bring to a simmer, then reduce heat to low and cook uncovered for 45-60 minutes, stirring occasionally until thickened and flavorful.
Stir bacon back into chili before serving. Adjust seasonings as needed.
