Ingredients
  

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1/2 lb beef stew meat, diced
  • 1/2 lb bacon, chopped
  • 1 small onion, finely chopped (optional)
  • 2 cloves garlic, minced (optional)
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper (optional)
  • to taste salt and black pepper
  • 1 cup beef broth
  • 1/2 cup tomato paste (optional)
  • 1 tbsp apple cider vinegar

Instructions
 

  • Cook chopped bacon in a large pot over medium heat until crispy. Remove bacon and leave fat in pot.
  • Add ground beef, pork, and diced stew meat to the pot. Brown thoroughly, breaking up ground meat as it cooks.
  • Add onion and garlic if using; sauté until softened, about 3-4 minutes.
  • Stir in chili powder, smoked paprika, cumin, cayenne, salt, and pepper. Cook until fragrant, about 1-2 minutes.
  • Add beef broth, tomato paste (if using), and apple cider vinegar. Stir to combine.
  • Bring to a simmer, then reduce heat to low and cook uncovered for 45-60 minutes, stirring occasionally until thickened and flavorful.
  • Stir bacon back into chili before serving. Adjust seasonings as needed.
