  • 1 lb shrimp, peeled and deveined Opt for fresh for the best flavor.
  • 1 lb smoked sausage, sliced Preferably chicken sausage for flavor.
  • 1 lb smoked chicken, shredded Can use leftover roasted chicken.
  • 1 can diced tomatoes Chili-flavored variety can be used for extra spice.
  • 1 medium onion, chopped Yellow onions are preferred.
  • 1 medium bell pepper, chopped Any color works but red or green stands out.
  • 3 cloves garlic, minced Fresh garlic is recommended.
  • 2 tbsp Cajun seasoning Store-bought or homemade blend.
  • 2 tbsp olive oil Extra-virgin for best flavor.
  • Salt and pepper to taste Adjust to personal preference.
  • Cooked rice or pasta For serving; brown rice recommended.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and bell pepper; cook until softened, about 5 minutes.
  • Stir in minced garlic and cook for an additional minute.
  • Add sliced smoked sausage and shredded smoked chicken; cook until heated through, about 3-4 minutes.
  • Stir in shrimp and Cajun seasoning, mixing well for about 3-4 minutes until shrimp are pink.
  • Add diced tomatoes and simmer for an additional 5-10 minutes.
  • Taste and season with salt and pepper as needed.
  • Serve over cooked rice or pasta.

Notes

Always taste as you go and adjust seasonings accordingly. Use fresh shrimp for the best flavor.
