Ingredients
  

For the Burritos

  • 4 large flour tortillas Soft and pliable for wrapping.
  • 6 large eggs Main protein source.
  • 1 cup shredded cheese Cheddar, Monterey Jack, or a blend.
  • 1 cup cooked and crumbled breakfast sausage or diced ham Savory protein addition.
  • 1 cup diced bell peppers Add sweetness and color.
  • 1 cup diced onions For flavor depth.
  • 1 cup cooked potatoes (optional) Diced for heartiness.
  • to taste none salt and pepper Essential for flavor.
  • for garnish none sour cream, salsa, or avocado Adds extra flavor and creaminess.

Instructions
 

Preparation

  • Start by heating up a large skillet over medium heat, and toss in your diced bell peppers and onions. Sauté until soft and caramelized, about 5-7 minutes.
  • While the peppers and onions are cooking, whisk the eggs with a pinch of salt and pepper until frothy.
  • Pour the egg mixture into the skillet with the sautéed veggies. Gently stir and scramble the eggs as they begin to set, cooking for about 3-5 minutes until soft and fluffy.
  • Mix in the cooked breakfast sausage or diced ham and diced potatoes (if using), stirring until everything is combined.

Assembly

  • Lay a tortilla flat and spoon a generous amount of the egg mixture in the center, then sprinkle cheese on top.
  • Roll the tortilla tightly, folding in the sides to secure the filling.
  • For meal prep, wrap each burrito in aluminum foil and freeze.

Reheating

  • When ready to eat, unwrap the burrito, microwave for 2-3 minutes, or bake in the oven at 350°F until heated through.
  • Top with sour cream, salsa, or diced avocado before serving.

Notes

For a lighter variant, use whole wheat or cauliflower tortillas. Egg whites can be substituted for a protein boost with lower calories.
