  • 1 piece Lemon (zest only) Adds a strong flavor; be careful not to include pith.
  • 2 tablespoons Fresh Lemon Juice Brings the dish to life.
  • 2 tablespoons Olive Oil Use high-quality for best results.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Grease a 9x13-inch baking dish with butter.
  • Pat the cod fillets dry, then season generously with salt and black pepper.
  • Arrange the seasoned fillets in the baking dish.

Topping

  • In a small saucepan over medium heat, melt the butter until foaming.
  • Remove from heat and stir in panko breadcrumbs, parsley, garlic powder, and lemon zest.

Baking

  • Evenly spread the breadcrumb mixture over the top of each cod fillet. Drizzle with lemon juice and olive oil.
  • Bake in the preheated oven for 12-15 minutes or until the cod flakes easily with a fork.

Serving

  • Allow the dish to rest for about 2 minutes before serving.
  • Pair with your favorite sides and enjoy!

Notes

Use fresh herbs for best flavor. Avoid overbaking for perfect texture. Experiment with cheese for added richness.
