Spices & Broth

  • 2 teaspoons ground cumin Adds warm, earthy flavor.

  • 2.5 cups beef broth Foundation for the sauce.

Instructions
 

Preparation

  • Toast the dried chiles in a skillet over medium heat for 2-3 minutes until fragrant.
  • Simmer the chiles, chopped onion, and garlic in enough water to cover for about 10 minutes until soft.
  • Transfer softened chiles, onion, and garlic to a blender, add 1 cup of the soaking liquid, cumin, coriander, oregano, and beef broth. Blend until smooth.

Cooking

  • Cut the beef into 2-inch cubes, season with salt, pepper, and toss in flour.
  • Heat a Dutch oven over medium-high heat and add neutral oil, then brown the beef in batches.
  • Remove beef, pour out excess oil, return beef to pot, cover with enough sauce, and add bay leaves.
  • Cover and simmer on low heat for 2 hours until beef is fork-tender.

Serving

  • Skim off any oil from the top of the dish before serving.
  • Serve hot with warmed corn tortillas and toppings like diced onion, cilantro, radishes, and lime.

Notes

For tender beef, do not rush the simmering time. Adjust the heat level based on preference and consider marinating the beef overnight for extra flavor.
