  • 1.5 lbs beef stew meat Opt for chuck or round.
  • 2 cups red wine Use a good quality table wine.
  • 1 medium onion, chopped Adds aromatic base.
  • 2 medium carrots, sliced Balances the dish.
  • 2 cloves garlic, minced Lends depth and aroma.
  • 2 cups beef broth Homemade or store-bought, low-sodium preferred.
  • 1 leaf bay leaf
  • 1 tsp thyme Fresh or dried.
  • Salt and pepper to taste

For the Smoked Gouda Grits

  • 1 cup grits Look for stone-ground grits.
  • 2 cups milk Whole or 2%, can substitute with plant-based.
  • 1 cup smoked Gouda cheese, shredded Can substitute with other cheeses like cheddar.
  • 2 tbsp butter For cooking.

Preparation

  • In a large pot, melt butter over medium heat.
  • Brown the beef stew meat on all sides, ensuring not to crowd the pot.
  • Add the chopped onion, sliced carrots, and minced garlic. Sauté until softened, about 5-7 minutes.
  • Pour in the red wine, scraping up any browned bits from the bottom.
  • Add the beef broth, bay leaf, and thyme. Bring to a gentle simmer.
  • Cover and let simmer for 1.5 to 2 hours, stirring occasionally.

Grits Preparation

  • In a separate saucepan, bring milk to a gentle boil.
  • Stir in the grits and remove from heat. Lower the heat and keep stirring to avoid lumps.
  • Once thickened, stir in the smoked Gouda cheese until melted and creamy.

Serving

  • Plate the creamy grits and ladle the Beef Burgundy over the top.
  • Enjoy your cozy meal!
