Ingredients
  

For the Chicken

  • 1 pound chicken breasts Preferably organic for better flavor and texture.
  • 1 cup flour For the first layer of the crispy coating.
  • 2 large eggs Beaten well for a fluffy coating.
  • 1 cup panko breadcrumbs Provides extra crunch.
  • 1 teaspoon garlic powder For added savory flavor.
  • 1/2 teaspoon salt Essential for seasoning.
  • 1/2 teaspoon pepper Essential for seasoning.
  • Vegetable oil for frying Vegetable oil Can use canola or peanut oil for a different flavor.

For the Sauce

  • 1/2 cup mayonnaise Forms the base of the sauce.
  • 2 tablespoons sweet chili sauce Adds sweetness.
  • 2 tablespoons sriracha For heat—adjust to taste.

Instructions
 

Preparation

  • Cut the chicken breasts into bite-sized pieces.

Setting Up

  • Set up three bowls: mix flour, garlic powder, salt, and pepper in the first; beat the eggs in the second; and pour panko breadcrumbs in the third.

Dipping the Chicken

  • Dip each chicken piece in the flour mixture, then in the egg wash, and finally into the panko breadcrumbs, pressing gently.

Frying

  • Heat enough vegetable oil in a frying pan to cover the bottom, about 1/4 inch deep over medium heat.
  • Add chicken pieces to the hot oil one by one, frying until golden brown and cooked through, about 5 to 6 minutes per side.

Making the Sauce

  • In a small bowl, whisk together mayonnaise, sweet chili sauce, and sriracha. Adjust to taste.

Serving

  • Remove chicken from the pan and drain on paper towels, then toss in the sauce before serving.

Notes

Ensure oil is hot enough to avoid greasy chicken. Serve with rice or tacos, and add veggies for extra crunch.
