  • 2 teaspoons baking powder Ensures the rolls rise and stay fluffy.
  • 1 tablespoon ground cinnamon Use more if desired for extra flavor.
  • 1/4 cup unsalted butter (melted) Let it cool slightly before mixing.
  • 3/4 cup whole milk (or almond milk) Adds moisture to the dough.
  • 2 large eggs Bind ingredients together and add fluffiness.
  • 1 teaspoon vanilla extract Use pure vanilla for the best flavor.

Cinnamon Sugar Filling

  • 1/4 cup granulated sugar For sweetening the filling.
  • 1 tablespoon ground cinnamon Enhances flavor in the filling.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a baking dish.
  • In a large bowl, mash the bananas until smooth.
  • Mix in melted butter, sugar, eggs, milk, and vanilla until combined.
  • In another bowl, whisk together flour, baking powder, and cinnamon.
  • Gradually add the dry ingredients to the wet mixture until just combined; do not overmix.
  • Roll out the dough on a floured surface into a rectangle (about 1/4 inch thick).

Rolling and Baking

  • Spread softened butter over the dough and sprinkle the cinnamon sugar mixture on top.
  • Roll the dough tightly into a log and cut into equal pieces (about 12 to 15 rolls).
  • Place the rolls in the greased dish, allowing them to rise slightly for about 15-20 minutes.
  • Bake for 25-30 minutes or until the tops are golden brown.

Notes

Store in an airtight container at room temperature for up to two days. Reheat in the microwave for about 10-15 seconds. For freezing: after cutting into rolls, lay them in a single layer on a baking sheet to freeze individually, then store in a zip-top freezer bag.
