  • 4 large eggs (brought to room temperature 30 minutes before blending) Helps bind everything together.
  • 90 g old-fashioned rolled oats (1 cup, not quick oats) Gives body and chewiness.
  • 1 ripe banana (the spottier, the better) Adds natural sweetness.
  • 80 ml maple syrup (⅓ cup) Adds depth of flavor.
  • 1 tsp baking soda Helps the mixture rise.

Toppings

  • 150 g fresh blueberries (1 cup; frozen works too) Provides flavor and antioxidants.

Preparation

  • Preheat your oven to 350°F (180°C).
  • Spray four 2-cup oven-safe bowls with non-stick cooking spray and place them on a large baking sheet.

Mixing the Batter

  • In a blender, combine the cottage cheese, eggs, oats, banana, maple syrup, and baking soda. Blend until smooth.
  • Pour the batter evenly into the prepared bowls, filling them two-thirds full.
  • Top each bowl with blueberries and gently press some down into the batter.

Baking

  • Bake for 35 to 40 minutes until golden brown and firm.
  • Cool for at least 10 minutes before serving.

Notes

Experiment with flavors by adding a sprinkle of cinnamon or chocolate chips. Make sure to cool the bowls before serving for the best texture.
