Preparation

  • Cook the chopped bacon in a skillet over medium-high heat until crispy, then transfer to a paper towel to drain.
  • In a mixing bowl, combine bacon, diced jalapeños, softened cream cheese, and shredded cheddar.

Assembly

  • Lay an eggroll wrapper flat at a diamond angle. Spoon filling into the center, fold sides over, and roll from the bottom, sealing tightly.

Cooking

  • Heat oil to 350°F (175°C). Gently drop eggrolls in batches, frying until golden brown (3-4 minutes).
  • Remove with a slotted spoon and drain on paper towels before serving.
