  • 4 large large potatoes Russet potatoes preferred for fluffiness.
  • 4 ounces bacon, chopped Can substitute with turkey bacon.
  • 4 ounces sausage, crumbled Choose spicy breakfast sausage or savory pork.
  • 1 cup shredded cheese Cheddar recommended for melting and flavor.
  • 1/2 cup sour cream Adds creaminess.
  • 1/4 cup green onions, chopped For freshness.
  • to taste Salt and pepper Essential for seasoning.
  • 1 tablespoon butter For greasing the loaf pan.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Place the large potatoes in a pot of salted water and bring it to a rolling boil. Cook until fork-tender, about 15-20 minutes.
  • While the potatoes are boiling, heat a skillet over medium heat and cook the chopped bacon and crumbled sausage until browned. Drain excess fat.
  • Once the potatoes are cool enough to handle, drain and mash them in a large bowl. Stir in sour cream, shredded cheese, green onions, cooked bacon, and sausage. Season with salt and pepper to taste.
  • Grease a loaf pan with butter.
  • Spoon the potato mixture into the prepared pan, pressing down firmly to pack it tightly.
  • Bake in the preheated oven for 30-35 minutes, or until heated through and the top is slightly golden.
  • Allow to cool for a few minutes before slicing and serving.

Notes

For a vegetarian option, substitute bacon and sausage with mushrooms or lentils. To make it spicy, add jalapeños.
