Ingredients
  

  • 2 cups Persian or English cucumbers, diced
  • 2 cups Roma or vine tomatoes, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup fresh parsley, finely chopped
  • 1/4 cup fresh mint leaves, finely chopped
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • to taste sea salt
  • to taste black pepper
  • optional ground sumac or pomegranate molasses

Instructions
 

  • Wash and finely dice the cucumbers and tomatoes.
  • Finely chop the red onion, parsley, and mint leaves.
  • In a large mixing bowl, combine all the chopped vegetables and herbs.
  • In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  • Pour the dressing over the salad and toss to combine thoroughly.
  • Taste and adjust seasoning as needed.
  • Let the salad sit for 5-10 minutes to allow flavors to meld before serving.
