  • 1/2 cup rolled oats or almond flour Oats for a chewier texture, almond flour for gluten-free.
  • 1/4 cup maple syrup or honey Maple syrup is preferred for flavor.
  • 1 1/2 tsp ground cinnamon Adds warmth to the dish.
  • 1 tsp vanilla extract Enhances the overall flavor.
  • 1 tsp baking powder Essential for texture.

Baking Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  • In a large bowl, whisk together cottage cheese, eggs, maple syrup, and vanilla extract until combined.
  • Stir in the rolled oats or almond flour, ground cinnamon, and baking powder until no dry flour is left.
  • Gently fold in the diced apples.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • Bake for 35-40 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  • Let it cool slightly before slicing into squares.

Notes

For best results, let the bake rest for 10-15 minutes before serving. You can also make it ahead of time and store it in the fridge overnight before baking.
